Gaining is a marathon and not a sprint. Im not sure how long you are on the gaining bandwagon but maybe stick it out longer than you normal would.
Have you seen that app "my fitness pal"? its great for checking how many calories you are eating. I only use to check how many calories Im eating for whatever meal if Im not sure. After Awhile I know my breakfast and lunch puts me way over the calories I need for the day and anything extra is bonus in my head.
Weight gain shakes are nice and pack high amount of calories. Have a look on here and other places and you could make your own up.
also snacking helps a lot to. And extra chocolate bar here and there adds up.
